Over Peru bursts a Colombian Castillo from Los Patios. De-pulped and then co-fermented with a watermelon concentrate and the station's solution: two days of infusion, then a meticulous dry-down that locks in the fruit. Out comes a juicy watermelon, an almost summery sweet freshness that wakes up the whole cup. Peru's chocolatey roundness and Colombia's punch attract and answer each other — serious and playful at once.
