Onto Peru is superimposed a Colombian Castillo from Los Patios. De-pulped, it is co-fermented with a fruit concentrate and the station's own solution for two days, the time it takes for the aromas to anchor into the bean before a long, monitored dry-down. The coffee comes out sunlit and radiant: candied peach, candy, lemon zest and a touch of coconut. Peru's deep, chocolatey base meets Colombia's bright yellow — a sunrise in the dark of the cup.
