In the Eastern Highlands of Papua New Guinea, around Okapa, coffee grows in small garden plots tended by a multitude of smallholders on rich volcanic soils. The cherries, heritage Typica and Bourbon, are fully washed and carefully dried for a cup of classic, reassuring cleanliness. Expect baker's chocolate, raisins, a twist of lemon zest and that trail-mix sweetness of dried fruit and nuts. A washed PNG, clean and balanced, a perfect everyday filter.
