Finca La Pradera is certified organic and bird-friendly, and stands out for its innovative approach to coffee farming. It relies on a complex agroforestry system with three shade layers and fifteen tree species, creating a rich habitat for local biodiversity and migratory birds while protecting the coffee plants from harsh sun. The farm uses sustainable practices such as terraces to reduce erosion, polyculture with fruit trees and poultry to diversify income and food, and 100% organic compost made on-site from filtered wastewater, chicken manure, and plant matter, while also providing solid facilities for seasonal workers. This “Comuneros” coffee is semi-washed—depulped, then the mucilage is removed by mechanical friction before drying without water—delivering a clean cup with some of the sweetness and character of mucilage, and its name pays tribute to the region’s 18th-century anti-colonial uprising.
